The whole lobe of Foie Gras is made from Mulard duck. It weighs between 400 and 700g and can be kept up to 14 days in the refrigerator and 2 years in the freezer. As soon as the livers are taken out of the duck's trunk, they are put in a liquid nitrogen freezer to freeze the fat molecules in a few minutes. The taste and quality of the livers are equal to the first day, and they give back 20 to 30% less fat than a classic refrigerated lobe. To cook this frozen liver, let it thaw overnight in the refrigerator, or 1.5 hours in warm water, then let it sit at room temperature for 1 hour before working on it.
