The syrup we should have released in 1998. Except that at the time, we were no match for the Tornado and the Sour Puss shooters. Then, one day of confinement, a certain Jean-Paul dared to say on Zoom that he was bored with the taste of real raspberries. Good thing we do too.
Our fresh raspberries are first frozen to help concentrate the juice. Then, the company Impress of Quebec City presses them into a smooth puree that is mixed with lemon juice and sugar before filtering. We decided to keep some of the pulp in the syrup so that we wouldn't miss any of Grandma's jam memories. Because even our memories are flavorless and preservative-free.
TASTE
A very acid roundness of raspberry coulis that develops jammy notes. In the end, you can bite into the astringency of fresh raspberry.
Ingredients: Sugar, water, raspberry juice, lemon juice, raspberry juice concentrate, citric acid (acidulant)
