Pâtes au homard et aux huîtres

PÂTES AU HOMARD ET AUX HUÎTRES

Portions : 4 – Préparation : 15 minutes – Cuisson : 10 minutes

INGRÉDIENTS

  • 4 homards du Nouveau Brunswick
  • 12 huîtres du Nouveau Brunswick
  • 1 oignon rouge, émincé
  • 1 botte d’asperges, pied retiré, coupées en tronçons
  • 60 ml (4 c. à table)huile d’olive
  • 60 ml (4 c. à table)beurre non salé, fondu
  • 1 pincée de safran
  • 3 ml (1/2 c. à thé) sarriette
  • 15 ml (1 c. à table) sirop d’érable
  • 60 ml (4 c. à table)vin blanc
  • 60 ml (4 c. à table)crème 35 %
  • 4 portions de pâtes fraîches cuites al dente
  • sel et poivre au goût

PRÉPARATION

  1. Dans un chaudron d’eau bouillante et salée, plongez et laissez cuire les homards, 3 minutes.

  2. Le homard n’est pas encore totalement cuit c’est voulu.

  3. Laissez refroidir, décortiquez et taillez en morceaux le homard.

  4. Entre temps, ouvrez et videz les huîtres dans un bol.

  5. Dans une poêle chaude, faites revenir l’oignon et les asperges dans l'huile d'olive, 3 minutes. Réservez.

  6. Dans une autre poêle chaude, faites chauffer le beurre, le safran, l’ail, la sarriette et le sirop d’érable.

  7. Ajoutez les morceaux de homard, les huîtres et laissez cuire, à feu moyen, 2 minutes.
  8. Retirez et réservez les morceaux de homard.
  9. Dans la poêle, ajoutez le vin blanc et la crème.
  10. Dans un bol, versez la préparation obtenue et à l’aide du pied mélangeur réduisez en purée. Vérifiez l’assaisonnement.
  11. Remettez le tout dans la poêle, laissez frémir puis ajoutez les pâtes fraîches, le homard, la préparation d’asperges et mélangez.

 


PASTA WITH LOBSTER AND OYSTERS

Servings : 4 - Preparation time : 15 minutes - Cooking time : 10 minutes

INGREDIENTS

  • 4 New Brunswick lobsters
  • 12 New Brunswick oysters
  • 1 red onion, minced
  • 1 bunch asparagus, stems removed, cut into chunks
  • 60 mL (4 tbsp) olive oil
  • 60 mL (4 tbsp) unsalted butter, melted
  • 1 pinch saffron
  • 3 mL (1/2 tsp.) savory
  • 15 mL (1 tbsp) maple syrup
  • 60 mL (4 tbsp) white wine
  • 60 mL (4 tbsp) 35% cream
  • 4 portions of fresh pasta cooked al dente
  • salt and pepper to taste

INSTRUCTIONS

  1. In a pot of boiling and salted water, plunge and let cook the lobsters, 3 minutes.

  2. The lobster is not yet completely cooked it is wanted.

  3. Let cool, shell and cut into pieces the lobster.

  4. Meanwhile, open and empty the oysters in a bowl.

  5. In a hot frying pan, make return the onion and the asparaguses in the olive oil, 3 minutes. Set aside.

  6. In another hot pan, heat the butter, saffron, garlic, savory and maple syrup.

  7. Add the pieces of lobster, the oysters and let cook, on average fire, 2 minutes.

  8. Remove and reserve the pieces of lobster.

  9. In the pan, add the white wine and the cream.

  10. In a bowl, pour the preparation obtained and with the help of the mixer foot reduce to a purée. Check the seasoning.

  11. Put the whole in the frying pan, let it simmer then add the fresh pasta, the lobster, the preparation of asparagus and mix.
