Gnocchi à la citrouille, sauce champignons, bacon et parmesan

GNOCCHI À LA CITROUILLE, SAUCE CHAMPIGNONS, BACON ET PARMESAN

Portions : 4 - Préparation : 2 heures – Cuisson : 60 minutes

INGRÉDIENTS

  • 1 courge (Butternut, poivrée, citrouille ou autre)
  • 1 œuf, le jaune
  • 500 ml (2 tasses) farine, torréfiée ou non
  • Sel et poivre au goût

La sauce

  • 1 échalote, hachée
  • 750 ml (3 tasses) champignons du Québec
  • 30 ml (2 c. à table) beurre de cacao Mycryo ou autre gras de votre choix
  • 125 ml (1/2 tasse) vin blanc
  • 2 branches de thym, effeuillées
  • 1 gousse d’ail, hachée
  • 125 ml (1/2 tasse) crème
  • 1 pincée de piment de Cayenne
  • 125 ml (1/2 tasse) bacon, cuit croustillant, haché 
  • 125 ml (1/2 tasse) parmesan, râpé
  • Sel et poivre au goût

PRÉPARATION

  1. Préchauffez le four, la grille au centre à 200° C (400° F).
  2. Coupez la courge en 2 et retirez les graines et filaments.
  3. Sur une plaque allant au four, recouverte de papier parchemin ou d’un tapis en silicone, déposez les 2 moitiés de courgette.
  4. Laissez cuire au four entre 45 à 60 minutes, jusqu'à ce que la chair soit tendre à la pointe d’un couteau. Laisser refroidir la courge.
  5. Entre temps, dans une poêle, dans le corps gras de votre choix, faites revenir l’échalote et les champignons.
  6. Déglacez avec le vin blanc et laissez réduire à sec. Ajoutez le thym, l’ail, la crème et le piment de Cayenne. Assaisonnez et mélangez le tout, tout en laissant réduire légèrement. Réservez au chaud.
  7. À l’aide d’une cuillère récupérer la chair de la courge, déposez-la dans une passoire et laissez-la s’égoutter durant 1 à 2 heures.
  8. Dans un bol, à l’aide d’une spatule, mélangez 375 ml (1 ½ tasse) de chair de courge, la farine et le jaune d’œuf. Assaisonnez en sel et poivre. Travaillez le mélange avec vos mains, jusqu’à obtenir une texture homogène.
  9. Ajustez la quantité de farine en fonction de la texture. Il faut chercher à obtenir une pâte légère et délicate et qui ne colle pas trop.
  10. Farinez le plan de travail. Roulez la préparation en forme de boudin fin. À l’aide d’un couteau, taillez et formez de petits gnocchis.
  11. Dans une casserole d’eau bouillante et salée, plongez les gnocchis et laissez cuire 3 à 4 minutes.
  12. Déposez directement les gnocchis dans la sauce. Servez les gnocchis, saupoudrés de bacon et de parmesan

  • 1 Squash (Butternut, poivrée, pumpkin or other)
  • 1 egg yolk
  • 500 ml (2 cups) flour, roasted or not
  • Salt and pepper to taste

Sauce

  • 1 shallot, chopped
  • 750 ml (3 cups) Québec mushrooms
  • 30 ml (2 tablespoons) Cocoa Mycryo butter or other fat of your choice
  • 125 ml (1/2 cup) white wine
  • 2 branches of thyme, the leaves
  • 1 garlic clove, chopped
  • 125 ml (1/2 cup) cream 35%
  • 1 pinch of cayenne pepper
  • 125 ml (1/2 cup) bacon, cooked crispy, chopped
  • 125 ml (1/2 cup) parmesan cheese, grated
  • Salt and pepper to taste

PRÉPARATION

  1. Preheat the oven, rack in center, at 200 ° C (400 ° F).
  2. Cut the squash in 2 and remove the seeds and filaments.
  3. On a baking sheet, covered with parchment paper or a silicone mat, place the 2 halves of squash.
  4. Bake for 45 to 60 minutes, until the interior is tender at the tip of a knife. Let cool the squash.
  5. Meanwhile, in a skillet, in the fat of your choice, sautée the shallot and mushrooms.
  6. Deglaze with white wine and let reduce to dryness. Add thyme, garlic, cream and cayenne pepper. Season and mix everything while letting it slightly reduce. Keep warm.
  7. Using a spoon, take out the interior of the squash and put it in a colander and let it drain for 1 to 2 hours.
  8. In a bowl, using a spatula, mix 375 ml (1 ½ cups) of squash, flour and egg yolk. Season with salt and pepper. Work the mixture with your hands until you obtain a homogeneous texture.
  9. Adjust the amount of flour according to the texture. We must try to obtain a light and delicate paste that doesn’t stick too much.
  10. Flour your work plan. Roll out the preparation in the shape of a tube. With a knife, cut and form small gnocchi.
  11. In a saucepan of boiling and salted water, put the gnocchi and cook them 3 to 4 minutes.
  12. Place the gnocchi directly in the sauce. Serve the gnocchi, sprinkled with bacon and Parmesan cheese.
