Amylase powder is a talcum powder made from malted barley that has been sprouted, dried and ground to produce a natural enzyme used to convert starch into sugar. The enzyme is similar to that which aids digestion in humans. It is gluten-free and is used in bread making to increase volume, improve texture and flavor and prevent staling. It adds a sweet, nutty flavor and a dark brown color to the crust. It is also an essential ingredient for home brewing and alcohol making.
