Description
A carbohydrate derived from purified starch, powdered (atomized) glucose syrup is a thickener that is easier to handle than conventional glucose syrup. Just mix it with 15% liquid to rehydrate it. It is generally used to improve the hold in baking but it can also be a sugar substitute.
Atomized glucose can be incorporated into ice cream or ice cream mixes, as a partial replacement for sugar. It provides great firmness, better extrusion, and prolongs shelf life.
