Origin and method

  • Origin: China
  • Cultivation: leaves shaded before harvest, like the best Japanese matchas, which increases chlorophyll and softens bitterness.
  • Cultivar: special “matcha latte” blend.

Ingredients

100% matcha green tea powder.

Preparation methods

Hot latte, 375 ml / 12 fl oz

  1. Whisk 2 g of matcha, about 1 teaspoon, into 50 ml of water at 90°C.
  2. Froth 200 ml of milk of your choice with a steam wand.
  3. Pour the milk over the tea and serve.

Iced latte, 375 ml / 12 fl oz

  1. Fill a glass with ice and pour in ¾ cup of milk, about 180 g.
  2. In a bowl, whisk 4 g of matcha, 2 teaspoons, with 1 to 2 teaspoons of sugar in 50 ml of hot water at 75 to 95°C until slightly frothy.
  3. Pour over the milk, stir if desired, and enjoy.

Traditional matcha

  1. Sift the desired amount for an ultra-creamy foam, optional but recommended.
  2. Warm the bowl, empty, wipe.
  3. Place 1 to 2 g of matcha, ½ to 1 teaspoon, in the center.
  4. Add 65 to 100 ml of water at 75°C.
  5. Whisk vigorously with a chasen for about 30 seconds until the foam is smooth.

Barista tips

  • Sift just before whisking for a finer foam with no lumps.
  • Store in the refrigerator after opening to keep the powder fresher longer.
  • For a bright green color, avoid boiling water; keep the temperature below 90°C.
