It is a fine white powdered starch, derived from tapioca, that can thicken without heat.
Ultra Tex 3 is tasteless, smooth and shiny, and creates a creamy mouth feel. It is stable under different temperatures, including freezing, and different pH values.
It is excellent for thickening sauces such as cheese, retaining moisture in baked goods, and thickening dry mixes. It can be dried into a thin crisp sheet.
Properties : Modified tapioca starch.
Use: Cold texturizing and thickening agent. Add liquid and whisk.
Remarks: You can also dry the mixes to make thin and crunchy sheets.
Elaboration: All kinds of sauces, purées, toppings and pastry elaborations. Cold cream of fruits or vegetables, hot cream (all preparations such as lemon cream etc...).
When cold, it has all the properties of a cooked starch and does not change the flavor.
