YUMGO Blanc is a 100% plant-based egg white substitute without the 14 major allergens. An incredible, easy-to-use product, YUMGO Blanc is the perfect replacement for egg white in your chocolate mousses, meringues, macaroons, financiers and more. All without changing your recipes! A short, natural ingredient list for ultra-gourmet results, and a carbon footprint 99% smaller than egg white!

1kg = equivalent to 315 egg whites

  • Vegetable substitute for egg white in powder form.
  • Replaces egg white powder (albumin) 1:1 in recipes.
  • For gourmet results and a reduced carbon footprint.
  • Properties: Foisonnant, Coagulant, Emulsifier.

Ingredients

Potato protein, acacia fiber, flax fiber, stabilizer: xanthan gum, salt.

USE

  • Recommended dosage: depends on recipe (see dosage table).
  • Ex: 10.5% dosage → 105g YUMGO Blanc in 895g water (= 33 egg whites).
  • Mix the water and powder with an immersion blender to obtain a homogeneous mixture, or whisk
  • whip up YUMGO Blanc by adding the powder and water (or other liquid) directly into the mixer.
  • Use the same amount of rehydrated YUMGO Blanc as egg whites in recipes.
  • Whipping: Use the maximum force of the food processor to whip the egg whites.
  • The mixture of YUMGO White and YUMGO Yellow is not a substitute for whole eggs.

Use

  • Recommended dosage: 10.5%.
  • Ex: 117.3 g in 1 L water = 37 egg whites
  • Mix water and powder with an immersion blender to obtain a homogeneous mixture.
  • Use the same quantity of YUMGO Blanc as egg whites in recipes.
  • Use the maximum force of the food processor for the egg whites.

  • 1kg YUMGO Blanc = approx. 315 egg whites (10.5% dosage)
  • Replaces egg white in sweet and savory recipes: mousses, meringues, cookies (dacquoise, financiers, macaroons...) confectionery (nougats...), cocktails...
  • Suitable for vegetarian and vegan diets

Storage

  • Store at room temperature
  • After use, store in a cool place (0 - 6°C) and consume within 7 days.
