YUMGO Blanc is a 100% plant-based egg white substitute without the 14 major allergens. - Vegetable substitute for egg white in powder form.
- Replaces egg white powder (albumin) 1:1 in recipes.
- For gourmet results and a reduced carbon footprint.
- Properties: Foisonnant, Coagulant, Emulsifier.
Ingredients
Potato protein, acacia fiber, flax fiber, stabilizer: xanthan gum, salt.
USE
- Recommended dosage: depends on recipe (see dosage table).
- Ex: 10.5% dosage → 105g YUMGO Blanc in 895g water (= 33 egg whites).
- Mix the water and powder with an immersion blender to obtain a homogeneous mixture, or whisk
- whip up YUMGO Blanc by adding the powder and water (or other liquid) directly into the mixer.
- Use the same amount of rehydrated YUMGO Blanc as egg whites in recipes.
- Whipping: Use the maximum force of the food processor to whip the egg whites.
- The mixture of YUMGO White and YUMGO Yellow is not a substitute for whole eggs.
Use
- Recommended dosage: 10.5%.
- Ex: 117.3 g in 1 L water = 37 egg whites
- Mix water and powder with an immersion blender to obtain a homogeneous mixture.
- Use the same quantity of YUMGO Blanc as egg whites in recipes.
- Use the maximum force of the food processor for the egg whites.

Storage
- Store at room temperature
- After use, store in a cool place (0 - 6°C) and consume within 7 days.
