YUMGO Yellow is a 100% plant-based egg yolk substitute, free from the 14 major allergens. This incredible product is simple to use, and YUMGO Yellow replaces egg yolk in your custard, crème brûlée, mayonnaise, etc., all without changing your recipes! - Vegetable substitute for powdered egg yolk.
- Replaces powdered egg yolk in 1:1 recipes.

- Properties: Emulsifier, Binder, Colorant, Gelling agent, Thickener.
Ingredients
Pea protein, gelling agent: agar agar, turmeric, flax fiber.
USE
- Recommended dosage: depends on recipe.
- Ex: 11% dosage → 110g YUMGO Yellow + 110g rapeseed or sunflower oil in 780g water (= 50 egg yolks).
- Mix the water, powder and oil with an immersion blender until smooth.
- Use the same amount of rehydrated YUMGO Yellow as egg yolks in recipes.
- For gelling (crème anglaise, crème brûlée, etc.) bring the mixture to the boil during recipe preparation. Gelling takes place when the product cools.
- YUMGO White and YUMGO Yellow do not replace whole eggs.

- Replaces egg yolk in sweet and savory recipes: creams (pastry, etc.), creamy sauces (mayonnaise, etc.), cookies (shortbread, etc.)...

Storage
- Store at room temperature
- After use, store in a cool place (0 - 6°C) and consume within 3 days.
