ROASTED PORK SHOULDER SANDWICH

Ingredients

The meat

  • 1kg (2 lb) roasted beef shoulder
  • 500 ml (2 cups) beer
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 500 ml (2 cups) BBQ sauce

Sandwich

  • 2 onions, thinly sliced
  • 12 to 16 slices pepperoni
  • 45 ml (3 tbsp.) oil
  • 60 ml (4 tbsp.) vinegar
  • 6 to 8 brioche rolls
  • 60 ml (4 tbsp) garlic butter
  • 90 ml (6 tbsp) BBQ sauce
  • 6 to 8 slices provolone cheese
  • 1 apple, thinly sliced
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 160°C (325°F).
  2. In a casserole or roasting pan, add meat, beer, onion, garlic and BBQ sauce, cover and bake for 5 hours.
  3. On the work surface, shred the meat.
  4. Meanwhile, in a hot frying pan, brown the onions and pepperoni in a little oil.
  5. Add vinegar and stir. Check seasoning.
  6. Open each loaf in half and brush with garlic butter.
  7. Top with the shredded meat, BBQ sauce, provolone, onion and pepperoni mixture and apple.
  8. Keep warm in the oven until ready to eat.
