Tempering Altara 63% chocolate

To successfully temper Altara chocolate, follow these three steps:

First, melt the chocolate to 45-50°C to eliminate all the cocoa butter crystals. Next, allow it to cool to 27.5-28.5°C, which allows stable crystals to form. Finally, slightly raise the temperature to 31-32°C, the ideal working temperature for obtaining shiny, crunchy, and perfectly stable chocolate.
