Master your leopard-spot crusts and elevate your pizzas with this ceramic-coated Neapolitan arch. The arch lowers the door height for better heat retention, creating an ideal environment for high-hydration doughs.
Neapolitan pizza is baked at a very high temperature and quickly. The oven must be at full power (450°C or higher), which allows for 45 to 60 seconds of baking time. To achieve perfect rise and a golden crust on a high-hydration dough, the air temperature must be extremely high. The arch narrows the oven opening, allowing the air to reach a much higher temperature and cook a perfect Neapolitan pizza.
The arch is made of bonded ceramic with a recess in the central opening to allow the pizza maker to "dome" the pizzas (place the rotating peel under the crust and lift the pizza into the flames/highest temperature of the oven).
The Dome flue extension vents smoke and soot from the furnace, improving air circulation.
The Neapolitan Arch is designed to enhance the cooking of gas-fired pizzas only. It is not designed for use with wood-fired pizzas.
