Used like nutmeg. Vanilla and almond scent that goes well with desserts, especially maple ones. The tonka bean is the core of a fruit from the West Indies and Central America, whose flavor is reminiscent of almond and vanilla. It is used grated in all kinds of desserts, sometimes even as a substitute for vanilla, although the result is quite different. It also lends itself well to creams: brulee, pastry, caramel ... Like nutmeg, tonka can be toxic if consumed in large quantities, but remains safe if used in reasonable quantities. Grate some in your pancake mixes, on your French toast or on seared scallops.
