Adaptable and resistant, the Santoku knife is usually used to chop and to slice. It is perfect to prepare fishes and shellfishes.

With a thickness of 3 mm, the full-tang blade extends throughout the entire length of the handle. The knife is robust and well balanced. After cutting, the wide blade can sweep the prepared food off the board.

Technical specifications

  • Blade lenght: 17cm
  • We use Sandvik 12C27 modified stainless steel. It is anti-corrosive thanks to the addition of chrome and requires no special maintenance. Its carbon content of at least 0.40% gives excellent cutting edge.Blade hardness 57-58 HRC
  • Handle: The moulded handle is made from fibreglass polyoxymethylene which ensures excellent resistance to wear and water and outstanding impact strength. Thanks to its curved shape and triangular profile, it provides a secure and comfortable grip.
    After washing, the fiberglass may show slight white streaks. Simply lightly oil the handle to restore its deep blue color.
  • Full-tang blade: The full-tang blade extends throughout the entire length of the handle. The knife is robust and well balanced.
