The passion fruits selected by Ponthier come primarily from the Esmeraldaz province on Ecuador's northwest coast. This region is also nicknamed the "Green Province" because of the abundant vegetation and the brilliant gemstones the Spanish believed they would find there.

The climate is ideal for fruit growing year-round, with stable temperatures ranging from only 21 to 25°C and particularly high humidity. Esmeraldaz enjoys radiant sunshine at dawn almost daily and tropical rains in the afternoon and night.

USES

Sorbets, ice creams, fruit mousses, Bavarian creams, charlottes, fruit jellies, pastries and iced desserts, coulis, toppings, Italian ice creams, granita, cocktails (can be used in a blender, shaker or directly in a glass)...

Store at -18°C. 30 months shelf life from production. After thawing, store at +2°C/+4°C and use within 15 days. For optimal quality, thaw in the refrigerator for 24 to 48 hours. Do not refreeze once thawed.
