Ultra-Sperse 3 is a high performance thickener made from modified tapioca starch. It has a neutral flavor and melts well in the mouth.
Used to thicken liquids and preparations with or without heat.
Origin: Food starch derived from tapioca
Characteristics of use: Thickens in cold liquids. Does not change the flavor of the liquid. Gives a smooth and shiny texture. Also gives a rich and creamy mouthfeel without changing the original flavor.
Use ratio: 4 to 8%.
