Blade shape specially designed for professional use, excellent sharpening potential. The materials used are cookware compatible and approved by the U.S. Food and Drug Administration (FDA). They are resistant to sudden temperature changes (-40°C to 150°C), corrosive agents and detergents. The knife can therefore be sterilized or cleaned in the dishwasher.
