The blade is perfect for making long cuts and slicing large pieces of meat evenly, thinly and without tearing. It can also be used to cut large fruits such as pineapples, to prepare carpaccios or slices of ham or large fish.
Its 20 cm, pointed and smooth blade is thinner and narrower than a chef's knife and offers greater precision when cutting.

- The Sandvik modified 12C27 stainless steel developed for Opinel is renowned for its sharpness and ease of maintenance. The stainless steel able to undergo the heat treatment which gives it its good hardness is called martensitic. It has a carbon content at least equal to 0.40% which allows to obtain a very satisfactory cutting edge without being sensitive to corrosion.57-58 HRC blade hardness.
- The handle is overmolded in polyoxymethylene filled with glass fiber which guarantees excellent resistance to wear, impact and water. The curved shape ensures a secure and comfortable grip.
