The extra large maple board is for those who like to have room to cook in large quantities. Heavy, elegant, stable, strong and durable, it can even be left on the counter permanently, ready for use at any time. This board has two hollowed-out handles for a good grip. One side has a groove around the edge to catch juice and the other is completely flat. Use it on both sides.
Unlike bamboo, which has to travel thousands of miles before it reaches our kitchen, maple is a local resource, the hardest of our wood species. It has a very high density and low porosity: qualities that facilitate cleaning and maintenance.
The glue used to laminate our boards is highly resistant to humidity and has been approved for food contact by the FDA. And yes, you can be reassured, Health Canada and MAPAQ approve wood as a work surface.
